Description

SAGARDI PAIRING

This gastronomic experience begins with a starter of fried txistorra and cod omelette, accompanied by the Valencian white wine "Cullerot", which highlights the freshness and smoothness of the flavors. The grilled txuleton, tender and juicy, is served with piquillo peppers and Hernani lettuce with spring onion, balanced by the Valencian red wine "El Parotet", which enhances the meat without overshadowing it. For dessert, the Basque goxua, smooth and creamy, is accompanied by Ochoa Muscat, which complements the sweetness of the dessert. All this is enjoyed with artisanal sourdough bread with prolonged fermentation.

TXULETÓN ROAST MASTER CLASS

In this workshop, we will learn about maturation techniques and their characteristics, visiting the meat maturation cellar located in the restaurant itself. We will learn, with the help of our expert butcher, all the secrets of cutting these pieces of meat and enjoy the preparation and tasting of an old cow tartare made on the spot. Then, by the grill, we will discover the secrets of Basque red meat roasting at 200º and with oak charcoal. The group will finally also conduct a final tasting of roasted meat with Malbec red wine by the grill.
