Opened in 2024 by chef and owner Eduardo Ferré, Amancaes proposes traveling to Peru without leaving Valencia.
A restaurant that explores Peruvian gastronomy in its entirety, from north to south and from the coast to the Amazon, also incorporating the influences that have shaped its cuisine, from Creole tradition to the present day.
In this journey, there is also a constant dialogue with the Mediterranean: products from the Valencian pantry are incorporated into a cuisine that seeks to showcase the diversity and richness of Peru beyond its most well-known dishes.
